Çiğ börek, also known as çibörek, is a dish of Crimean Tatar origin, widely eaten in Central Asia, Russia, former Soviet Republics, Eastern Europe, and Turkey. It consists of a deep-fried pastry filled with meat and onions, typical of Central Asian cuisine. The dish is particularly popular in Eskişehir, Turkey, due to significant Tatar migration. Despite its name meaning “raw pastry,” the term “çiğ” actually comes from the Tatar word for “delicious.”
