Healthy White Wine

391628 02: In his laboratory at Haifa''s Rambam Hospital, Israeli biochemist Prof. Michael Aviram holds July 9, 2001 a glass of "healthy white" Chardonnay developed by cellar master Amram Surasky of the nearby Binyamina Winery, which Aviram says is rich in flavonoids, the ingredient normally found in red wines responsible for the low rate of heart attacks amongs the French. Aviram''s research seeks out nutritional supplements which can prevent heart attacks by stopping cholesterol in the blood stream from oxidising and depositing fatty cells on artery walls, and at a wine science meeting in April, he announced the discovery of a new process to get more flavonoids into white wines.
